EZ Chicken Ramen

Broth
Chicken Carcass
4 green onions
Just a whack of veggie scraps you’ve kept (make sure there is an onion with skins, garlic, carrot, ginger, pepper)
2 slices of bacon
2 tsp sesame oil

Optional:
2 pieces of kombu
6 oz shiitake mushrooms
1 pound chicken wings or feet
Shrimp shells


Marinated Egg
4 large eggs
3 garlic cloves
1/2 tsp crushed red pepper flakes
1/2 tbsp mirin (optional)
1/2 tbsp rice vinegar (or another light vinegar)
2 cups of water
4 tbsp soy sauce

Toppings
Spinach
Fried garlic chips (thinly sliced garlic fried in oil VERY briefly)
Corn
Roasted veg of choice
Bacon
Nori
Pickled Mushrooms
Sesame Seeds
Green onion
Fried chicken skin
Love

STEPS

Broth

Best made starting in the morning. Place chicken carcass (and raw wings or feet if using) into the large soup pot, covering completely with cold water. Bring to boil and then immediately remove from heat. Add in all veg, bacon, all your veggie scraps and sesame oil (mushrooms and kombu if using). Bring back to a boil and reduce to simmer. Skim for impurities (grey and foamy) but keep fat (oily looking floaties). Continue to simmer for a LONG time, like all day. Like 8 hours. Like all the Lord of the Rings Trilogy. Topping with water if bones start to show.

Remove from heat and carefully strain through a fine-mesh strainer. Use immediately or allow to cool before refrigerating or freezing.

Eggs

Bring a pot of water to boil. Gently poke the large end of eggs with a sewing needle, or very carefully with the end of meat thermometer (the tiny hole allows for easier peeling). Lower eggs into the pot, when water comes back to boil, cook for 5 minutes. Have a bowl of ice water ready to rock. Remove with a slotted spoon into ice water and cool for 3 minutes. Peel those cuties.

Bring remaining ingredients to boil in a saucepan. Reduce heat stirring, and let simmer for 5 minutes. Remove from heat and add eggs, marinating for 2 hours. Cut in half and enjoy.

Boil noodles as per package instructions. Place into serving bowls and top with broth, toppings of choice and eggs. Sit back, take a breath, and enjoy that soup you fucking babe you.
