Spring Herbed White Beans

INGREDIENTS

Herb Dressing
1/4 Cup red onion, diced
1/2 cup cilantro
1/2 cup basil
1/2 tsp red chili flakes
1/2 cup olive oil
Lemon
Salt and Pepper

Beans
2 tbsp olive oil
2 garlic cloves, crushed
2 cans white beans
Salt and Pepper
1/2 cup chicken or veggie stock stock
1 tbsp white wine or vinegar (apple cider, white wine, balsamic)

STEPS

In a blender or food processor (or with a mortar and pestle), crush herbs, chili, and onion until finely chopped. Emulsify oil by slowly drizzling in as blending, pulsing or crushing with pestle. Place into small bowl and mix in lemon, and salt and pepper to taste.

For beans, heat olive oil in deep skillet over medium heat, add garlic cooking for about 1 minute until fragrant. Add rinsed beans and cook for about 3 minutes, stirring to combine flavours. Mash about 1/2 cup of the beans with back of spoon to add creamy consistency to the dish, make sure to leave rest of beans whole for a nice bite.

Add stock and wine or vinegar, and bring to simmer for another couple of minutes. Cook until reduced to desired consistency, adding more stock if need be. Taste, and season with salt and pepper.

Transfer to large bowl and gently mix in herb dressing, topping with lemon zest and salt if that tickles your fancy. Delicious with pan roasted fish.
